Once upon a time, in a field not too far from here, a golden handful of sweet corn kernels realized they were kind of a big deal. 😌🌟

While people across the country bundled up for winter, these Florida kernels were out in the fields soaking up sunshine like it was July. 😆☀️🌴

And word got around…

Thanks to a few well-placed ears, the news spread quickly. Since most corn this time of year was canned, frozen, or creamed, this crew, shining bright and bringing warm sunshine to every plate, became something truly extraordinary. ✨

And from that day forward, sweet corn officially stopped being referred to as a side dish and earned the notable title of seasonal icon! 🌽🏆🎄😂

And wow… what a moment! 🤩📸

At this point, even we have to laugh… yes, we’

But when the calendar gifts us National Green Bean Casserole Day, we simply rise to the occasion. 😌 After all, we already told you… we are living it up in our green bean era! 😆💚

Here’s a little journey through time behind the side dish that became a holiday legend… 🎞️📽️

📍 1955 – Once Upon a Recipe…
Dorcas Reilly, a home economics recipe manager at Campbell’s, set out to create a simple, budget-friendly dish using ingredients almost every American kitchen had on hand. And just like that, the “Green Bean Bake” was born.

⭐️ 1960s – A Star Is Born
Campbell’s printed the recipe on their soup cans, and the casserole took off. Fun fact: nearly 40 percent of all Cream of Mushroom soup sold still ends up in this dish!

🏛️ 2002 – Forever Iconic
Dorcas donated her original handwritten recipe card to the National Inventors Hall of Fame, where it sits proudly alongside some of America’s greatest innovations.

🎉 2025 – Today!
It is December 3, and we celebrate this cozy, nostalgic, holiday-defining classic with an entire day dedicated in its honor!

🌽 Sweet & Smoky Corn Ribs

INGREDIENTS:
• 3–4 cooked or marinated sweet corn cobs
• 1 tbsp olive oil (15 ml) or melted butter (15 g)
• ½ tsp smoked paprika
• ¼ tsp chili powder (optional)
• ¼ tsp garlic powder
• pinch of salt
• to serve: fresh lime juice, grated Parmesan, chili flakes, or chopped cilantro

Dip:
• 2 tbsp mayonnaise (30 g)
• 2 tbsp Greek yogurt (30 g)
• 1 tsp sriracha (or more to taste)
• 1 tsp lime juice
• ½ tsp sugar
• pinch of salt

HOW TO COOK:
1. Remove the corn from the bag and pat it dry with paper towels (if using pre-cooked corn).

2. Stand each cob upright and slice lengthwise into quarters.

3. In a small bowl, mix olive oil with smoked paprika, chili, garlic, and salt. Brush all sides of the corn ribs.

4. Cook:
• air fryer: 375°F (190°C) for 6–8 min, shaking halfway through
• oven: 400°F (200°C) for 12–15 min, flipping halfway (you’re just crisping and caramelizing the edges)

5. Mix all the dip ingredients until smooth.

6. Finish corn with lime juice, Parmesan, and chili flakes. Serve hot with the dip on the side.

If you’re using fresh corn:
✔️ microwave each cob for 1–2 minutes first to soften slightly
✔️ it makes slicing much safer and easier
✔️ add an extra ½ tbsp of oil or butter to help it roast evenly since raw corn is drier inside
✔️ cook about twice as long, flipping halfway, until the edges are lightly curled and golden

⚡️Macros (per serving, with dip): 250 kcal | 6g protein | 12g fat | 28g carbs

While our clocks may have recently changed and the days feel a little shorter, farmers soak up every bit of sunshine they can get. ☀️

Did you know that, contrary to popular belief, American farmers didn’t lobby for daylight saving time? They actually opposed it when it was first introduced on March 31, 1918, as a wartime measure.

Out on the farm, time isn’t measured by the clock. It’s measured in acres… and in all the sunshine the good Lord blesses us with. ☀️🚜

I stir fresh green beans in a mix of fresh lemon juice, garlic, olive oil, salt and pepper. After 10 minutes in the oven, I sprinkle them with grated parmesan. They finish roasting in a couple minutes, which is enough time for the cheese to melt. Then I toss them with toasted almonds, chopped parsley and lemon zest. The green beans turn out lemony, nutty and crisp. This recipe will definitely be on my Thanksgiving menu.
